Vegan Chocolate Orange Granola

I have no qualms in expressing my LOVE for granola. I’d have it for breakfast, lunch, dinner and snacks if I allowed myself to. I’ve made this Vegan Chocolate Orange Granola to satisfy my needs but also my purse. Good quality vegan granola can be an absolute fortune, which I think is usually unnecessary. You might also notice that I’ve done quite a few chocolate orange related posts. For this I don’t apologise. It’s not only a classic combination, it’s also a favourite of my friend James, who’s been getting a few ‘healthier’ treats recently for his new eating regime.
Your belly and your purse will be saying thank you very much, both at the same time :)

Ingredients for Vegan Chocolate Orange Granola

400g oats (gluten free if you are)
50g coconut oil
50g sunflower oil
2 large oranges (zest and juice)
100g maple syrup/fruit syrup/date syrup (or honey if you aren’t vegan)
75g roughly chopped day chocolate

A large baking sheet, 15inches by 12 (or 2 smaller ones)

Preheat oven to 130oC

1) In a small saucepan over a low heat, gently melt your coconut oil. Once done, set aside.

2) In a large bowl chuck in the oats, sunflower oil, zest and juice of the oranges as well as the coconut oil and stir until everything is evenly mixed and evenly coated.

3) Pour into the large baking sheet (or two if you don’t have one big enough!) and pat it down so that everything is evenly spaced and it is quite flat. Pop into the oven for 20-25mins.

4) Once it’s had it’s time, take it out of the oven and let it cool until it has hardened. Pour the chopped dark chocolate over the tray. Some of the granola bits may be a bit too big for your taste, so crush it up until you get your desired size bites, then pour your Vegan Chocolate Orange Granola into an airtight container/jar for munching on later!
