It’s the end of the summer holiday season and that staple present your dad/sister/cousin/boyfriend brings you back from that exotic destinatation? A Toblerone.
Someone was only remembered at the airport on the way home. I jest. (Well, I half jest, as this is often true) BUT let’s look at this positively. Toblerones are well under rated and usually MASSIVE. So, instead of pushing it to the back of the cupboard and forgetting about it until the new year or devouring it in one go while catching up on Big Bang Theory. Let’s makes my Stupidly Moist Banana & Toblerone Muffins. Hurrah!
Ingredients for Stupidly Moist Banana & Toblerone Muffins
150g self raising flour
140g caster sugar
2 medium eggs
1 tsp vanilla extract
3 medium ripe bananas (2 mashed with the back of a fork, one sliced into 1 or 2 cm slices)
100g unsalted butter
200g Toblerone (I had milk choc version, but dark/white will work. Chopped into big chucks)
12 muffin cases and muffin baking tray
Makes 12 muffins
Preheat oven to 180oC
1) In a medium bowl, sieve the flour. Set aside.
2) In a large bowl pop in all the caster sugar, eggs, vanilla extract and the 2 mashed bananas. Whisk them together until everything has combined. Then add the butter and whisk again until it is all combined and slightly lighter in colour.
3) Pop the flour into the large bowl and fold carefully with the other ingredients with a wooden spoon, but only until the flour is just combined. Do. Not. OverMix. Now chuck in about 180g of the chopped up Toblerone and 3/4 of the sliced banana. Mix until evenly dispersed.
4) Pour the batter into the prepared muffin cases until they are 3/4 full. Top each muffin with a slice or 2 of banana and a few chucks of Toblerone (makes them look pretty!) Pop into the preheated oven on the middle shelf for about 25 mins. They are done when they have started to brown round the edges and a skewer inserted into the middle comes out clean. Leave to cool on the baking tray until cool, then transfer onto a wire rack to cool completely.
Or if you can’t wait, scoff ’em while they’re still hot!
These are the most beautiful muffins ever. I now buy toblerone specifically to make them!! Does anyone know if these can be frozen and enjoyed later?
