Jaffa Muffins

One of my favourite childhood treats were Jaffa Cakes. I say childhood treat, my adulthood enjoys them too. So, I thought I’d do a variation and make some Jaffa muffins.
It was also my brothers birthday last week and I didn’t have a moment to bake something for the day, so these are also know as grovelling apology Jaffa muffins. Let’s hope they go down well….!

Ingredients For Jaffa Muffins

For the muffins

2 medium eggs
1/2 tsp vanilla extract
60g unsalted butter
220g caster sugar
220g self raising flour
180ml whole milk

For the chocolate frosting

65g unsalted butter
210g icing sugar
40g cocoa powder
80g cream cheese
1-2 tsp whole milk

For the orange filling

11-12 tsp of orange curd
Zest of 1/2 an orange

12 muffin cases and a muffin tray

Preheat the oven to 180oC

For the cupcakes

1) In a small bowl crack in the 2 eggs, add the vanilla extract and whisk until all combined. Set aside.

2) In a large bowl whisk together the butter and sugar until you get a sandy consistency. Then chuck in the egg mixture and half the milk and whisk again. Pour in half the flour and remaining milk and fold together, be careful not to over mix. Repeat with the remaining flour.

3) Pour the batter into the muffin cases until they are 3/4 full. Pop on the middle shelf of the preheated oven for 20-22 mins, or until a skewer inserted comes out clean and they have begun to brown round the edges. Once done, leave to cool in the tray and turn out onto a wire rack to cool completely.

For the frosting

4) Sift the icing sugar and cocoa into a large bowl. Then pop in the cream cheese and butter. Now mix them together – this is always a bit messy, so I start with a wooden spoon and then finish off with a whisk once I know the icing sugar isn’t going to cover my kitchen! Whisk for at least 3/4 mins. If the mixture is a little thick add a few drops of milk and continue to whisk to loosen it. Done.

To assemble

5) Once the cupcakes are completely cool, using a knife, cut a small hole (about 2/3cm in width and depth) into the top of the cupcake. Now plop about a tsp of orange curd into this hole. Top with the chocolate frosting – I use a blunt knife to push it around the cupcake – and sprinkle with a little orange zest for decoration.

And there you have it – the mighty Jaffa muffin!!

  • I added this recipe to my to-do list when it was first published. I believe however in going with the seasons, so I was waiting for the orange harvest where I live so that I could make the curd.

    I have just made the muffins and they were well worth the wait. They are a great and novel ideas and taste delicious.
