‘Better For You’ Muffins – Apple & Cinnamon (Dairy Free, Wholemeal)

Oh gosh, it’s not even a week into my healthy January kick and I am CRAVING some kind of treat. Muffins in particular. Healthy Muffins maybe? I can make some healthy (ish) muffins! YES! I won’t feel guilty but I’ll be satisfied. This is the kind of baking I need..and maybe you too? Be strong bakers.

Ingredients For Healthy Muffins

200g wholemeal flour
75g oats (+ tbsp for sprinkling)
1 tbsp baking powder
1 tbsp ground cinnamon
1 medium egg
75g caster sugar
1 tbsp honey (+ a little extra for drizzling)
200ml almond milk (or coconut/rice or dairy if not dairy intolerant)
2 medium apples (1 grated, 1 cut into 1 cm – ish – sized cubes)

Pre heat oven to 200oC

12 hole muffin tray and 12 muffin cases….OR… (which is probably preferred for these) Just grease the muffin tins with a little butter or oil, no need for cases.

1) In a medium bowl chuck in the flour, oats, baking powder and cinnamon. Mix with a wooden spoon until everything has mixed together evenly.

2) In a large bowl whisk together the egg, sugar and honey. Once done, add half the milk and all the grated apple and mix again. Then fold in half the flour mixture into this bowl, until it is has just combined. Then the same again with the remaining milk and flour mixture. Remembering to not OVER MIX. Be sparing.

3) Pour in the cubed apple bites and fold again until they are evenly dispersed.

4) Now fill your muffin cases or greased baking tray with the batter until they are level with the top of the case/hole. Sprinkle the top of each with some extra oats and drizzle the top with a little honey.

5) Pop on the middle shelf of the pre-heated oven for about 18-20 mins or until they are golden and a skewer inserted comes out clean. Leave to cool in the tin and then turn out onto a wire rack to cool completely. Viola!
