Healthy gluten free granola

‘Feel Better’ Gluten Free Granola (Gluten, Dairy & Refined Sugar Free)

Anyone else often have cereal as dessert?? I absolutely LOVE granola! Morning, noon and night. I’d be happy if this was the only meal I ate for the rest of my life (…maybe a slight exaggeration, this evening I made spicy chorizo burgers and that’s gotta be in my top 5 dinners…) Anyway, granola is not only expensive, it’s absolutely full of sugar and often nowhere near as healthy as it sounds. So I decided to make my own healthy gluten free granola and therefore I feel guilty no more! I’ve kept mine simple, but feel free to personalise it with nuts, dried fruits and seeds! Dinner, I mean, breakfast awaits!

Ingredients For Healthy Gluten Free Granola

100g coconut oil
400g gluten free oats (or normal porridge oats if you’re not gluten free)
60g desiccated coconut
100g maple syrup
100g honey

(Desired handfuls of your choice of nuts, seeds, dried fruit)

Pre heat your oven to 110oC

A large baking sheet, 15inches by 12 (or 2 smaller ones)

1) In a small saucepan over a low heat, gently melt your coconut oil. Once done, set aside.

2) In a large bowl chuck in all your remaining ingredients as well as the coconut oil and stir until everything is evenly mixed and evenly coated.

3) Pour into the large baking sheet (or two if you don’t have one big enough!) and pat it down so that everything is evenly spaced and it is quite flat. Pop into the oven for 20mins, stiring once half way through.

4) Take it out of the oven and let it cool until it has hardened. Some bits may be a bit too big for your taste, so crush it up until you get your desired size bites, then pour your healthy gluten free granola into an airtight container/jar for munching on later!

    • I’m so glad! I bought mine from Tesco (it is was on offer last week…hopefully still is now) but I have seen it in all health food shops, holland and barrett, whole foods etc, I think all the bigger supermarkets sell them too. Usually with olive/veg oil or in the health food section. hope that helps, if all else fails, online! xx
