Christmas Rocky Road is probably the easiest Christmas themed treat there is going. It’s utterly indulgent and perfect for the chocolate lover. I wanted something that was going to be quick & easy to make, look Christmassay and made me feel naughty eating it. I reckon this Christmas Rocky Road covers all those bases. But more importantly, I think it’s a great homemade present that you can make in advance AND make a massive batch of. If (speaking from experience here) it gets past your own front door…..

Christmas Rocky Road Ingredients

450g white chocolate
100g mini white marshmallows
100g fresh cranberries
50g raspberries
40g macadamia nuts
130g shortbread biscuits (chopped into small chunks)

Greased and lined baking sheet 9″ by 7″

1) In a medium saucepan pop in the fresh cranberries and cover with boiling water, bring to the boil and simmer until you hear the cranberries popping. (You do this to take out some of the sour-ness) drain and set aside.

2) In a Bain-Marie (if you’ve no idea what I’m talking about click here and go to tip 11!) melt the white chocolate. Once melted, remove from heat and chuck in the marshmallows, cranberries, raspberries, nuts and shortbread, mix until everything is evenly dispersed.

Tip: be a little careful when mixing as the cranberries will break and stain the White colour – which is great – but you don’t want to over do it

3) Pour the mixture into your prepared baking sheet and leave to set in the fridge for a couple of hours. Once set, cut into desired size chunks and you’re done!
