Vegan Dark Chocolate and Orange Oatmeal Cookies

It’s January and I’m overwhelmed with Veganuary posts on social media. Anyone else trying it? I’m trying a Vegan diet for a few days a week, for reasons I won’t talk about now, so thought it was a great excuse to make a ‘healthy’ Vegan snack, and that’s where these Vegan Dark Chocolate and Orange Oatmeal Cookies have come from. Vegan definitely doesn’t mean tasteless or boring – if anything, the complete opposite, so you can enjoy these guilt free (even if you’re not Vegan!)

Ingredients for Vegan Dark Chocolate and Orange Oatmeal Cookies

140g flour (I used a mix of spelt and wholemeal)
100g oats
1/2 tsp baking powder
1/2 tsp bicarbonate of sada
1/2 tsp fine table salt
65g/ml oat milk (or any non dairy milk)
80g coconut oil or sunflower/vegetable oil
80g Caster sugar or fruit sugar
1/2 tsp orange extract (optional)
the zest of one medium-large orange
50-60g dark chocolate (I used 85%) – chop into small chucks

2 baking sheets lined or greased with oil/oil spray

makes about 10 cookies

Preheat oven to 180oC

1) If you’re using coconut oil, melt it in a small saucepan over a low heat, then set aside to cool. If using sunflower or veg oil ignore this step!

2) In a medium bowl chuck together the flour, oats, baking powder, soda and salt and mix together well with a wooden spoon.

3) In a large bowl chuck in the milk, oil, sugar, extract and zest and whisk well.

4) Pour about half of the flour into the large bowl and fold together with a wooden spoon. Once it has just come together, pour the remaining flour into the bowl and repeat. Once it has just mixed pour the chopped dark chocolate in and mix again until all the chocolate is evenly dispersed.

5) This mixture will be very sticky. That’s cool. Using a tablespoon, scoop a piled amount onto the spoon and then place onto the prepared baking sheet, then use your fingers to form it into a round biscuit shape. These cookies don’t spread much so you can place them close-ish together.

6) Pop them on the middle shelf of a pre heated oven for about 12-14 mins, they are done when they start to brown around the edges. If you like a softer cookie, stick to 11-12 mins, if you like something a little crispier go with 14-15 mins. Leave them to cool on the tray then turn them out onto a wire rack to cool completely.

Done and yum!

  • You mention sugar in the method but not in the ingredients, I was already half way through when I noticed so I made them without. They definitely need some sort of sweetener, just thought you might like to amend in case someone else has an issue. Amy xx
