Tropical Fruit Loaf – Dairy Free

Myself and my other half have given up a few indulgent treats for Lent, so I wanted to make something that will satisfy our sweet tooth, but, also something that we would actually look forward to eating too! I asked him what sort of flavours he wanted and viola – so was created the Tropical Fruit Loaf (pining for some sunnier climbs perhaps?). It’s dairy free too, I think my belly prefers a ‘dairy lighter’ life, so something to keep that happy as well – plus it meant I could add extra coconut stuff. ALWAYS a bonus.

Ingredients for Tropical Fruit Loaf

150g self raising flour
120g wholemeal flour
75g caster sugar
60g honey/fruit/date syrup (+ 1-2 tbsp for drizzling)
55g veg/sunflower oil
2 medium eggs
180ml coconut milk
20g desiccated coconut
140g mixed tropical dried fruit/Trail mix (papaya, coconut, banana, apricot)

A loaf tin lined with baking parchment or greased with an oil spray

preheat oven to 180oC

1) In a medium bowl mix together the self raising flour and wholemeal flour. Set aside.

2) In a large bowl chuck in the caster sugar, honey/fruit or date syrup, oil and eggs and whisk together on a medium-high speed for a few minutes.

3) Pour half of the flour mixture and half of the coconut milk (90ml) into the large bowl and carefully fold together with a wooden spoon, until it has only just come together. Once done, repeat with the remaining flour and milk. Next chuck in the desiccated coconut and about 120g of the mixed tropical fruit (the extra 20g is for popping on top) and fold again with the wooden spoon so everything is evenly dispersed. Do not over mix!

4) Pour this into the prepared loaf tin and flatten the top with the back of a spoon, (for a lovely even rise click here and go to number 8 for a helpful trick!) scatter over the remaining 20g of tropical fruit on top of the loaf and place on the middle shelf of your pre heated oven for about 50 mins. Once it has been in the oven for about 30 mins, I popped some tin foil over the top of the loaf so it didn’t brown too much, but still cooked! It’s baked when a skewer inserted comes out clean.

5) Take out of the oven and leave to cool in the tin. While it’s cooling, drizzle over 1-2 tbsp of honey/fruit syrup and then turn out onto a wire rack to cool completely. We ate ours with some coconut ice cream – RECOMMENDED.
